Potato Goulash

1 Tbsp. vegetable oil
2 medium onions, diced
1 cup water
3 potatoes, uncooked, cut into small cubes
2 green bell peppers, chopped
3/4 tsp. dried marjoram
1 tsp. salt

• Heat the oil in a large skillet over medium heat.
•Sauté the onions in the oil for a few minutes, then add the water, potatoes, and peppers and cook, covered, until the potatoes are soft, about 10 to 15 minutes. Add the marjoram and salt, stir, and serve.

Makes 2 servings.
