Grilled Pineapple ‘Chicken’ Kebabs

1 cup lime juice
2 cups pineapple, cubed
1 cup mandarin oranges (or 1 cup orange juice)
1/2 cup salsa
1 tsp. cayenne pepper
4 vegan chicken breasts (or 18 oz. seitan), cubed
8 skewers, soaked in water
Cherry tomatoes
1 green pepper, seeded and cut into squares
1 tsp. oregano
1 tsp. pepper
Salt, to taste

• Combine the lime juice, pineapple, oranges, salsa, and cayenne in a large bowl.
• Add the “chicken” and marinate for 2 to 5 hours. Remove the “chicken” and reserve the marinade.
• Thread the “chicken” on the skewers, alternating with the pineapple, tomatoes, and green peppers. Sprinkle with the oregano, pepper, and salt.
• Grill until the “chicken” is cooked and the pineapple is slightly caramelized.

Makes 4 servings
