1 qts. (4 cups) vanilla soy milk
1 cup uncooked rice
1 cup sugar
3 Tbsp. cold margarine
Pinch of salt
1 tsp. vanilla
1/4 cup dried cranberries or cherries (optional)
1/4 cup chopped, dried apricots (optional)
1/2 tsp. cinnamon
• Combine all the ingredients in a slow cooker. Cook on low for 2 to 4 hours, stirring every hour, until the desired consistency is reached.
