Ingredients

  • 1 15-oz. can kidney beans

  • 1 15-oz. can pinto beans

  • 1 15-oz. can black-eyed peas

  • 1 10-oz. pkg. frozen lima beans

  • 1 cup frozen corn

  • 1 large red bell pepper, finely diced

  • 1/2 medium sweet onion, chopped

  • 1/2-3/4 cup low-fat Italian salad dressing

  • 1/2 tsp. black pepper

  • Salt and pepper, to taste

Directions

  • Drain and rinse the canned beans.
  • In a medium bowl, combine all the beans, corn, red pepper, and onion and stir to mix.
  • Add the dressing and pepper and toss to mix.
  • Season with salt and pepper and serve.
