Ingredients
4 medium red tomatoes
Salt and freshly ground black pepper, to taste
4 tsp. vegan butter, melted
3/4 cup breadcrumbs
1/4 cup parmesan “cheese”
2 Tbsp. chives, chopped
1 tsp. dried basil
Directions
- Preheat the oven to 350°F.
- Cut the tomatoes in half and place them face up on an oiled baking sheet. Sprinkle them with salt and pepper.
- In a bowl, mix together the vegan butter, breadcrumbs, parmesan, chives, and basil, then spread a spoonful on top of each tomato.
- Bake the tomatoes for 15 to 20 minutes or until the tops are golden.
- Serve them piping hot.
