Ingredients

  • 4 medium red tomatoes

  • Salt and freshly ground black pepper, to taste

  • 4 tsp. vegan butter, melted

  • 3/4 cup breadcrumbs

  • 1/4 cup parmesan “cheese”

  • 2 Tbsp. chives, chopped

  • 1 tsp. dried basil

Directions

  • Preheat the oven to 350°F.
  • Cut the tomatoes in half and place them face up on an oiled baking sheet. Sprinkle them with salt and pepper.
  • In a bowl, mix together the vegan butter, breadcrumbs, parmesan, chives, and basil, then spread a spoonful on top of each tomato.
  • Bake the tomatoes for 15 to 20 minutes or until the tops are golden.
  • Serve them piping hot.
