Ingredients

  • For the Chick’n:
  • 1 Tbsp. olive oil

  • 1/2 cup thinly sliced white onion

  • 1/2 lb. vegan chicken strips

  • Salt and pepper, to taste

  • For the Salsa:
  • 1 cup chopped strawberries

  • 1 Tbsp. orange juice

  • 1 tsp. orange zest

  • 1 green onion, thinly sliced

  • 1 tsp. Dijon mustard

  • 2 Tbsp. dried cranberries

  • 2 Tbsp. red wine vinegar

Directions

  • Heat the olive oil in a sauté pan over medium heat. Add the onions and vegan chicken. Sauté until the onion is translucent and the vegan chicken is heated through.
  • Season with the salt and pepper.
  • Combine all salsa ingredients in a medium bowl. Cover and chill for 1 hour. Serve with the prepared vegan chicken.
