Cheezy Tater Tot Casserole



For the Casserole

  • 1 32-oz. pkg.  frozen tater tots, thawed
  • 1/2 cup vegan butter, melted
  • 10 oz. vegan cream of chicken soup (recipe below)
  • 16 oz. vegan sour cream
  • 1/2 cup finely chopped onion
  • 2 cups shredded vegan cheddar cheese
  • 1/4 tsp. pepper

For the Vegan Cream of Chicken Soup

  • 3 Tbsp. vegan butter
  • 1 Tbsp. all-purpose flour
  • 1/2 cup unsweetened vegan milk
  • 1/2 cup vegan chicken broth
  • 1 tsp. nutritional yeast
  • Sea salt, to taste
  • Ground black pepper, to taste


Vegan Cream of Chicken Soup Instructions

  1. Melt the vegan butter in a small saucepan over medium-high heat.
  2. Add the flour and whisk until smooth.
  3. Add the vegan milk, vegan chicken broth, nutritional yeast, salt, and pepper.
  4. Bring to a boil and continue whisking for 2 minutes, or until thickened.

Makes 10 oz.

Vegan Cream of Chicken Soup Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch-by-13-inch casserole dish with vegan butter.
  3. In a large bowl, combine the thawed tater tots, melted vegan butter, vegan cream of chicken soup, vegan sour cream, onion, 1 1/2 cups of the vegan cheddar cheese, and pepper.
  4. Spread the mixture into the prepared baking dish and top with the remaining vegan cheddar cheese.
  5. Bake 45 to 55 minutes, or until hot and bubbly.
