Following Boichik Bagel’s announcement that it had stopped selling its popular Egg and Eggything Bagels on June 21 due to FDA allergen-control requirements, PETA has delivered an eggscellentsolution to the shop today: a supply of vegan JUST Egg that can easily take the place of chicken eggs, along with a letter urging owner Emily Winston to bring back the bagels, but upgraded with allergen-free vegan egg that is 100% cholesterol-free and cruelty-free.

As PETA points out, vegan eggs offer the same rich, eggy flavor and texture as chicken eggs, can be crafted into omelets and more—and don’t require the factory farming and the violent killing of real birds. They’re also naturally free of common allergens and would allow everyone to enjoy Boichik’s signature “eggy” bagels.

“Vegan eggs will address Boichik’s allergen concerns and they are all the rage,” says PETA Manager Jakob Shaw. “With more diners in the Bay Area and country-wide looking for vegan options, PETA suggests that Boichik Bagels relaunch its bagels with a new twist.”

Chickens feel joy, fear, pain, and love, just as humans do, but hens used for egg production are kept in filthy, crowded sheds where they don’t even have enough room to spread their wings. Once their egg production drops, they’re sent to slaughterhouses where their throats are slit—often while they’re still conscious—and many drown in scalding hot de-feathering tanks. As PETA shares in its recent white paper, all eggs, even those labeled “cage‑free,” inflict immense cruelty on mother hens and chicks—and in some cases, cage-free systems can even cause more suffering.

Each person who goes vegan spares nearly 200 animals every year. PETA’s free vegan starter kit can help those looking to make the switch.

PETA—whose motto reads, in part, that “animals are not ours to eat”—points out thatEvery Animal Is Someone and offers free Empathy Kits for people who need a lesson in kindness. For more information, please visit PETA.org or follow PETA on X, Facebook, or Instagram.

PETA’s letter to Winston follows.

Emily Winston

Owner and Founder

Boichik Bagels

Dear Ms. Winston,

I hope this letter finds you well. I’m writing on behalf of People for the Ethical Treatment of Animals (PETA), as a longtime customer of Boichik Bagels (your sesame bagel with vegan cream cheese, cucumbers, and capers is my go-to!) and a Berkeley resident, with a solution to the discontinued egg and “eggything” bagels: add a vegan egg bagel to the menu that customers, vegan and non-vegan, will be sure to love!

Vegan egg products have come a long way—they’re flavorful and easy to bake with without sacrificing taste or quality. One option is JUST Egg, a plant-based egg substitute made from mung beans. Each serving contains protein and no cholesterol, and it has been praised by bakers and chefs alike for convincingly replicating the texture and cooking characteristics of chicken eggs.

Making the switch could allow you to bring back a fan-favorite and spare chickens who are often confined to filthy, crowded sheds, where they don’t even have enough room to spread their wings without hitting other birds. Offering a vegan egg bagel is a win-win that compassionate consumers are sure to eat up.

Please enjoy our delivery of vegan egg samples for you and your team to try. We can also connect you with suppliers, and we’d be happy to spread the word about the new vegan egg bagel with our thousands of local members and supporters.

Thank you for your time. I look forward to hearing from you!

Warmly,

Jakob Shaw
