Crispy ‘Shrimp’ Banh Mi

  • Warm the olive oil in a skillet over medium heat.
  • Add the “shrimp” and sauté on one side for about 2 minutes, or until golden brown. Flip and cook for 1 more minute.
  • Preheat the oven to 350°F. Cut a lengthwise slit in each demi baguette and place on a baking sheet. Toast in the oven for 3 to 5 minutes.
  • Spread some Basil Lime Aioli onto each demi baguette and add 1/4 of the cooked shrimp. Top with Crunchy Cabbage Slaw, Quick Pickled Red Onion, and chopped peanuts.

Pro tip: Instead of a baguette, you can serve the sandwich on a hot dog bun or sandwich roll.
