Vegan Mock-Duck Gumbo

1 Tbsp. olive oil
3 cups chopped onion
3 cloves fresh garlic, chopped
2 green bell peppers, chopped 
3 stalks celery, chopped
1 cup vegetable broth
4 cups water
1 cup roux (1/2 cup flour, 1/2 cup sunflower oil)*
Sea salt, black pepper, and red pepper, to taste
Cajun seasoning, to taste
1 lb. chopped mock duck or vegan chicken 
1/2 cup chopped fresh flat-leaf parsley
1/2 cup chopped green onion tops
Cooked rice

  • Heat the olive oil in large saucepan and add the onion, garlic, bell pepper, and celery. Cook until softened.
  • Add the vegetable broth and water. Bring to a boil and cook for 5 minutes.
  • Add the roux and lower the heat. Add the sea salt, black pepper, red pepper, and Cajun seasoning and cook for 30 minutes.
  • Add the mock duck (or vegan chicken) and stir in the parsley and green onion tops. Cook for 10 minutes and serve over the rice.

Makes 4 to 6 servings

*Note: For the roux, combine the flour and sunflower oil in a heavy pot over medium-high heat. Cook, stirring constantly, for 30 minutes, or until the mixture is chocolate brown, being careful not to burn.

    i went from being a carnivore to full on vegan in one night. i watched what really happened to animals on dairy farms and how they are treated in the money-making -indusrty and was mortified. i’ve been vegan for a year now and will never touch meat again( or any other animal product). i hate heartless people and even if i cant stop them on my own, i will not play a part in what they consider a “game”

    Hi I been changing my diet to vegetarian / vegan and althought I find it challenging , I happy to say I’m almost there.
    The other day while browsing in the shops for something different I. Came across vegetarian bacon flavor bacon rashers and ham flavour sandwich slices
    Well, I had to smile because if you are vegetarian why on earth do you want bacon flavour !!!!! I presume ( I hope) that is artificial bacon flavour ,but Still i think is silly
    We Australians some times are a bit over the top ….. I think !!!

    I was vegan for a while but found it quite hard as I cannot have soya or wheat and most mock meats have these in them. i cannot have dairy either but thats not really a problem on vegan diet and I choose rice milk rather than soya. I also have to be careful with sugar as I am sensitive to this too. Doesn’t leave much of a choice.

    Good recipe, I add diced tomatoes (about 2-3 cups) at the end of step 4 and that makes it awesome@!!@

    I became a vegetarian by starting with one meal each day – in my case it was breakfast. You could also do lunch — make a pot full of veg soup with beans and pasta, or salads, or wraps with faux meat or other protein (mashed beans, hummus.) Once you’ve discovered some food combos that you like, you can continue to build on them. I found that making small consistent changes – most recently giving up cow’s milk and butter – has enabled me to move consistently along a path that I intend to end at becoming a full-fledged vegan.

    This recipe is so simple and nutritious. There is no reason why anyone cannot be vegan. Just substitute your meat for mock meat. If you live in UK, Redwoods does great mock duck. Ideal for wraps. Just add a bit of hoisin sauce and vegetables. (I don’t work for Redwoods. Just love their vegan foods)
