5 Surprising Egg Substitutes

Veganizing most traditional baking recipes is a cinch as long as you know a few key substitutions. For a butter substitute, there’s vegan margarine. For dairy milk, there’s soy milk, almond milk, or other nondairy milks. Those are easy, but how do you replace eggs?

The substitute you choose depends on the recipe, and luckily, you might already have many of these ingredients in your kitchen. Longtime vegans might be familiar with a couple of the items on this list, but there are a few surprises, too.

Here are five surprising egg substitutes that you can use to veganize recipes:

1. Applesauce: Use applesauce to add moisture. Replace one egg with 1/4 cup of applesauce in sweet desserts.

2. Bananas: Use bananas to add moisture. One mashed banana can replace one egg in cakes and sweet breads.

3. Flaxseeds: Use flaxseeds for binding. Combine 1 tablespoonful of ground flaxseeds with 3 tablespoonfuls of water to make a thick and gelatinous egg replacement.

4. Instant mashed potatoes: Use instant mashed potatoes for binding. Use 2 tablespoonfuls of instant mashed potatoes to replace one egg in recipes that are meant to be dense.

5. Diet soda: Use diet soda as a leavening agent. One can of diet soda can be used to replace two eggs in many cake recipes.

    When making sponge cakes, if I can’t find egg replacer, I just use soya milk in place of the milk in the recipe, and sprinkle in a tablespoon of custard powder! It works brilliantly :) Pureed silken tofu can be a fabulous egg replacer in recipes like quiche and fritatta :) I’m a typical healthy-vegan, so I probably wouldn’t use the soda option. But my family are totally junk-food-vegans, so I’ll keep it in mind for them!

    I have always been a Vegetarian but am now turning to be a Vegan. I have always enjoyed my Cheese and Eggs but have a great Supporter who is teaching me these are not good and as long as I am almost there anyway why not take the next step. Wish me luck!

    Why do people think that just because someone is vegan they are doing it to live a healthy lifestyle. I’m a vegan because eating meat and dairy products hurt both animals and humans. It astonishes me that people would say “I am surprised you would promote diet soda with its’ chemicals as an egg substitue in a vegan diet. Is there a healthy diet soda out there that doesn’t contain aspirtaine ect…” PETA doesn’t care about one’s health per se, they care about the mistreatment and abuse of animals.

    I use flaxseed usually – 2 tablespoons ground flaxseed to 3 tablespoons warm water, and let it sit for 5 minutes before using – but I have also used banana, applesauce, crushed pineapple, ‘Deb’ potato, and a product called ‘no egg’, which I buy from a health food store. All work quite well, you just have to choose which one to use in each recipe. It’s not going to help using potato in cookies, or applesauce in patties. :)

    I am surprised you would promote diet soda with its’ chemicals as an egg substitue in a vegan diet. Is there a healthy diet soda out there that doesn’t contain aspirtaine ect…

    I use applesauce or flax paste, but I think the banana is too strong a flavor so I use 1/2 of a banana for one egg. Also, I’m experimenting with the new product The Vegg…having good results!

    I always try to use flaxseed…superexcellent source of omega-3, which doesn’t diminish in baking. Lots of uses for it, so I buy it in bulk…great stuff!

    Diet soda is really bad for you. You might want to try some of the other substitutes that have more nutrition.

    Those are great substitutes for eggs. I have been a vegan for many years now and I have never needed any egg substitutes; I search for vegan recipes directly. There are tons and tons of them on the internet.

    1 can of diet soda to replace 2 eggs seems excessive. Is that a typo? For scrambled “eggs,” scrambled tofu makes a great substitute, especially if you can get a hold of black Indian Salt (kala namak).

    Awesome article! Last year I made banana cupcakes for my bf for his birthday and I substituted more bananas for the eggs. He wasn’t thrilled about the substitution, but said they were delicious. He’s biased towards vegetarian and vegan things because of pretentious vegetarians and vegans even though he’s dating a non-pretentious vegetarian -_-

    I use both ground & whole (shown above) flax seed in my whole wheat waffles. I pour some soymilk over a couple spoons full vinegar & canola oil; add whole wheat flour, baking powder, baking soda, & sea salt. You will never miss the eggs.

    I’m a little dismayed that PETA would recommend using diet sodas as egg substitutes in cake recipes. Diet sodas contain sugar substitutes which are not healthy. I also think that recommending instant mash potatoes as an egg substitute is not healthy either as they are processed.

    Diet soda contains artificial sugar that is dangerous to health. Why is it included in your list? Vegetarianism should also be conscious about food safety, I suppose.

    Don’t assume that sodas are vegan. Coke and pepsi (plus many others) use animal scent glands in their products. It’s not obvious bacause they are included under ‘natural flavors’. Watch out also for ‘natural colorings’ many of which also come from animals.

    I make egg salad sandwiches with the high protein extra firm tofu that comes in a brick at Trader Joe’s(not the kind in water and plastic containers). I crumble it and fry it dry to get the moisture out, then use as one would use eggs. Yummy!

    The flax seed one is great for the “egg wash” on the top of breads before baking for a nice crust.

    Diet soda, really? Come on, we want people to be healthy. Diet soda is NOT in any way healthy. I think I’d rather take my chances using eggs! Other than that, great suggestions!

    No to diet soda because of artificial sweeteners and additives. No to instant potatoes because most of them contain BHT.

    I have tried most of these, but I didn’t know about the mashed potatoes. I wouldn’t use the diet soda because of the aspartame. Has someone used a diet soda with stevia?

    I like all of these a lot, except many instant potatoes have BHT in them, a known carcinogen and diet soda may as well be devils juice it’s so bad for you. I’d rather use an egg from a local pasteure raised chicken instead of either of these.

    The diet soda and instant potatoes are a horrible idea. Stay with the whole foods options.

    @ Carol: not all diet sodas contain aspartame. You can purchase diet sodas at health food stores and Whole Foods that are all natural.

    Great substitutes for eggs. However, since diet sodas contain aspartame, a very harmful ingredient, I would leave that out of your choices for substitutes for eggs.

    I had no idea there were so many egg substitutes! I am allergic to eggs and it makes it very hard to bake, which I love to do, so I am always wanting to find ways to make sweet desserts, etc. Absolutely going to give several of these a try. Side note, I just discovered flaxseeds (and I love them) and am excited to try them in my next baking endeavor.
