2 flour tortillas
2 Tbsp. vegan cream cheese
1 carrot, grated
2 lettuce leaves (or handful of baby spinach leaves)
• Warm the tortillas in a dry pan. Spread vegan cream cheese on them. Add the grated carrot and lettuce or spinach. Roll up and serve, or wrap them in plastic for snacking later.
Variations: add thin sticks of cucumber or sweet red pepper before rolling.
