Vegan Chocolate Chip Cookies

3 1/4 cups plus 2 Tbsp. all-purpose flour
1 1/2 tsp. baking soda
9 oz. margarine
1 cup plus 2 Tbsp. sugar
1 cup plus 2 Tbsp. brown sugar
Egg replacer equivalent to 3 eggs (4 1/2 tsp. powder mixed with 6 Tbsp. warm water)
3 Tbsp. vanilla extract
1 1/2 cups vegan chocolate chips

• Sift together the flour and baking soda. Set aside.
• Cream together the margarine and sugars in a large bowl. Stir in the egg replacer and vanilla. Add the flour mixture, stirring until just incorporated. Fold in the chocolate chips.
• Scoop by the tablespoonful onto a lightly greased baking sheet. Bake at 375°F for 9 to 12 minutes, or until golden.

Makes approximately 2 dozen
