Ingredients

  • 3 1/4 cups plus 2 Tbsp. all-purpose flour

  • 1 1/2 tsp. baking soda

  • 9 oz. margarine

  • 1 cup plus 2 Tbsp. sugar

  • 1 cup plus 2 Tbsp. brown sugar

  • Egg replacer equivalent to 3 eggs (4 1/2 tsp. powder mixed with 6 Tbsp. warm water)

  • 3 Tbsp. vanilla extract

  • 1 1/2 cups vegan chocolate chips

Directions

  • Sift together the flour and baking soda. Set aside.
  • Cream together the margarine and sugars in a large bowl. Stir in the egg replacer and vanilla. Add the flour mixture, stirring until just incorporated. Fold in the chocolate chips.
  • Scoop by the tablespoonful onto a lightly greased baking sheet. Bake at 375°F for 9 to 12 minutes, or until golden.
