Tim’s Vegan Pancakes

1 cup whole-wheat pastry flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup semisweet chocolate chips
1 cup hemp milk*
1 Tbsp. agave nectar
1 Tbsp. canola oil
1 tsp. vanilla extract
3 strawberries, chopped

• In a large bowl, combine the flour, baking soda, salt, and chocolate chips.
• In a separate bowl, combine the hemp milk, agave nectar, canola oil, and vanilla extract. Incorporate into the flour mixture.
• Add the strawberries and mix until no lumps of flour remain. Be careful not to overmix.
• Cook on a preheated, lightly oiled pan over medium heat. Flip when bubbles form on the surface and the edges begin to dry.

*Note: For thicker pancakes, use less hemp milk. For thinner pancakes, use more hemp milk.

Makes 4 servings
