This vegan BLT sandwich made with tempeh is a refreshing and filling lunch.

Ingredients

  • 1 pkg. Lightlife Smoky Tempeh Strips

  • 2 Tbsp. vegan mayo

  • 4 slices sourdough sandwich bread, toasted

  • Salt and pepper, to taste

  • 1 beefsteak or heirloom tomato, sliced

  • 2 leaves romaine lettuce

  • Avocado and sliced red onion (optional)

Directions

  • Cut the tempeh bacon strips in half and cook according to package directions.
  • Spread the vegan mayo on one side of each slice of toasted bread. Season with the salt and pepper.
  • Assemble the sandwiches, layering the tempeh bacon, tomato, and lettuce (along with the avocado and sliced red onion, if desired).
  • Cut in half and serve.
