1 red pepper, roasted, peeled, and finely chopped
1 tomato, finely chopped
2 Tbsp. olive oil
2-3 Tbsp. lemon juice
1 tsp. cumin powder
1 1/2 cups coriander, chopped
1 1/2 cups parsley, chopped
Salt, to taste
• Mix all the ingredients together, then taste and adjust the seasoning.
• Serve chilled.
