Saucy Beans & Franks
1 16-oz. can pinto beans, rinsed and drained
1/3 cup ketchup
2 vegetarian hot dogs, sliced into 1-4-inch rounds
1 Tbsp. soy sauce
1 Tbsp. light molasses
1 tsp. brown rice vinegar or balsamic vinegar
1/2 tsp. onion granules
1/4 tsp. dry mustard
A few drops of liquid smoke (optional)
• Place all the ingredients in a medium saucepan and gently stir them together. Simmer the mixture over medium heat, stirring occasionally, until hot and bubbly. Serve immediately.
