1 Tbsp. nondairy margarine (try Earth Balance brand)
1 white onion, diced
1 green bell pepper, diced
1 pkg. vegetarian sausage (try Lightlife Gimme Lean Sausage Style)
1 tsp. paprika
1 tsp. soy sauce
Salt and pepper, to taste
Hot sauce, to taste
•In a cast-iron skillet or Dutch oven, melt the margarine and add the onion and pepper. Cook until the vegetables are softened.
•Add the remaining ingredients and cook for 5 to 10 minutes or until everything is heated through.
•Serve hot with toast.
