Kale Caesar SaladPrint
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 3 cups chopped kale
- 1/2 avocado, peeled, pitted, and cut into chunks
- 1/4 red onion, diced
- Vegan Caesar dressing, to taste
- Cracked pepper, to taste
- Combine the quinoa, tomatoes, kale, avocado, and onion in a large mixing bowl.
- Top with vegan Caesar dressing (try Follow Your Heart brand) and cracked pepper, then toss and serve.
