Forbidden Black Rice

2 cups black rice
3 1/2 cups water
5 1/2 Tbsp. sugar
2 1/2 Tbsp. mirin
Pinch of salt

• Place all the ingredients in a pot and bring to a boil for one minute.
• Reduce the heat to a low simmer, cover, and cook for 30 minutes. Keep covered for 5 to 10 more minutes, then fluff the rice and let it cool.
