Ingredients
1½ cups of espresso or strong coffee
¼ cup of amaretto liqueur or almond extract
3-4 8.8-oz. packages of Biscoff cookies
2 8-oz. containers of vegan cream cheese
8 oz. plain vegan yogurt
1½ cups smooth Biscoff cookie spread
1 tsp. vanilla extract

Directions
- In a small bowl, stir together the espresso or strong coffee and amaretto liqueur or almond extract.
- Take 1 or 2 packages of Biscoff cookies and quickly dip each cookie into the coffee mixture, then place them in a single layer in a 9×13-inch baking dish.
- In a blender, whip together the vegan cream cheese, yogurt, Biscoff spread, and vanilla extract. Spread half of the cream mixture over the cookies. Top with another layer of dipped cookies, then another layer of cream mixture. Sprinkle a fine layer of espresso or cocoa powder over the top. Cover and chill several hours before serving.
