This slow-cooker recipe for vegan curried rice and lentils is great as a lunch or dinner on a cold day.

Ingredients

  • 1 cup long-grained rice

  • 1 Tbsp. curry powder

  • 3 1/4 cups water

  • 1/4 cup lentils

  • 3 vegetable bouillon cubes

  • 1/4 tsp. garlic powder

  • 1/4 tsp. pepper

  • 2 Tbsp. vegan yogurt

  • 1 medium onion, quartered and thinly sliced

Directions

  • Combine all the ingredients in a slow cooker. Cover and cook on low for 4 to 5 hours.
  • Add a dollop of vegan yogurt to each serving.
