Make an easy vegan cole slaw overnight.

Ingredients

  • 1/3 cup Nayonaise or Vegenaise

  • 3 Tbsp. white vinegar

  • 2 Tbsp. plus 2 tsp. granulated sugar

  • 2 Tbsp. plain soy milk

  • Dash salt

  • 1 cabbage, chopped

  • 1/2 cup carrot, shredded

Directions

  • Combine all the ingredients, except the cabbage and carrots, in a large bowl and blend with an electric mixer until smooth.
  • Add the cabbage and carrots and toss well.
  • Cover and chill overnight in the refrigerator. The flavors fully develop after 24 to 48 hours.
