If you haven’t heard of Chloe Coscarelli, who earned her vegan badge of honor with three cookbooks and a win on the Food Network’s Cupcake Wars, you’ve been missing out.

She opened her flagship restaurant by CHLOE. in Manhattan’s West Village in 2015 and, less than a year later, is set to open two more locations in SoHo and the Flatiron District. You could say she’s “killing it” without killing animals.

by CHLOE. is a quick-serve restaurant featuring an eclectic menu, including burgers, brunch, desserts, and cold-pressed juices—all of which are reasonably priced, all-natural, and 100 percent plant-based.

After you read this and hop on the next flight to New York City, you’ll want to try the famous Pesto Meatball sub, the Mac N’ Cheese, and the Air Baked French Fries, for starters. Dessert will be the Kale Cookies + Cream, of course.

The following morning, order The Early Bird, featuring an organic tofu scramble, spinach, maple sausage, market greens, and seven-grain toast. Also try Mom’s Cinnamon Roll.

For lunch, try The Guac Burger and a Kale Caesar salad. We could go on and on.
