This Dish Is Made With So Much Violence That It Is Outlawed in 16 Countries

To produce foie gras (which literally means “fatty liver”), workers shove tubes down the throats of male ducks or geese and pump as much as 4 pounds of grain and fat into their stomachs, causing their livers to swell to up to 10 times their normal size. The animals are packed into sheds, where they are force-fed two to three times per day.

On some farms, a single worker may be expected to force-feed 500 individuals three times a day. Because workers rush, the animals are handled roughly and end up with painful injuries. After this negligence and abuse, the ducks and geese can feel extremely ill, have difficulty standing, and even struggle to breathe because of their engorged livers. In some cases, their organs even rupture.

Forward-thinking chefs and companies, including Aramark, Costco, IKEA, Sam’s Club, Target, Whole Foods, Hai Hospitality, and world-renowned chef Wolfgang Puck, have removed the dish from their shelves and menus. There is no reason that others cannot do the same.
