To encourage people to give birds a break this Thanksgiving, vegan influencer and restaurateur Tabay Atkins is teaming up with PETA to unveil a new menu item at his locally-based/Kahului-based food truck Tabay’s Mindful Kitchen—a mouthwatering ThanksVegan Sandwich. Stuffed with savory meat-free turkey, fluffy mashed potatoes, and fried onions smothered with cranberry sauce and gravy, the limited-edition handheld holiday feast will come with a free sticker and ThanksVegan guide. The dish will be available through the end of the month—with a portion of the proceeds supporting PETA’s vital work for animals.
Atkins, who grabbed headlines for becoming the youngest certified yoga instructor in the U.S. at just 10 years old, was named a “Hero to Animals” by peta2—part of PETA’s youth division—when he turned compassion into action by opening Tabay’s Mindful Kitchen at 16. Since then, he’s been winning people over from Orange County to Kahului, one delicious plant-powered wrap, burger, or bowl at a time.

“Tabay’s Mindful Kitchen is giving everyone something to be thankful for by serving up a hearty ThanksVegan sandwich that leaves turkeys and all other animals in peace,” says peta2 Vice President Rachelle Owen. “PETA is encouraging everyone to celebrate with compassion by tucking into delicious vegan meals this Thanksgiving and beyond.”
In nature, turkeys can live for over 10 years and spend their days caring for their babies, building nests, and roosting in trees. But those raised for food are slaughtered within their first six months of life—and an average of 46 million are killed each year for Thanksgiving alone. Workers hang the young birds upside down, drag them through an electrified bath, slit their throats, and dump them into scalding-hot defeathering tanks—often while they’re still conscious.
In addition to sparing nearly 200 animals every year a miserable life and a terrifying death, each person who goes vegan dramatically shrinks their food-related carbon footprint and slashes their risk of developing cancer, heart disease, and other illnesses. PETA’s free vegan starter kit—and guide to the best meat-free holiday roasts—can help those looking to make the switch.
Tabay’s Mindful Kitchen is located at 520 Keolani Place, Kahului.
PETA—whose motto reads, in part, that “animals are not ours to eat”—points out that Every Animal Is Someone and offers free Empathy Kits for people who need a lesson in kindness. For more information, please visit PETA.org or follow PETA on X, Facebook, or Instagram.
