Broccoli Raab With Spaghetti

4 Tbsp. olive oil
2-3 minced garlic cloves
Hot pepper flakes, to taste
1 cup water, plus more as needed
1/2 tsp. salt
12 oz. spaghetti, broken into 2-inch pieces
8 cups chopped broccoli raab

• Heat the olive oil in a sauté pan over medium heat. Sauté the garlic and hot pepper flakes until the garlic begins to brown. Add the water and salt and bring to a boil.
• Add the spaghetti and stir to coat. Bring back to a boil.
• Add the broccoli raab and cook, stirring often and adding water to prevent the pasta from sticking, for 20 minutes, or until the pasta is almost done. Then stop adding water and cook until thick.
• Let sit for 10 minutes before serving.

Makes 4 servings
