Hawaiian ‘Beef’ Skewers

For the Marinade:
2/3 cup ketchup
1/4 cup vinegar
2 tsp. brown sugar
3 Tbsp. lemon juice
4 tsp. grated onion
1 tsp. mustard
1 Tbsp. vegan Worcestershire sauce
3 Tbsp. dry sherry
1/4 cup orange juice
3/4 tsp. liquid smoke
Salt, pepper, and paprika, to taste
2 lbs. vegan beef

• Mix together all the ingredients, except the “beef,” in a saucepan over medium heat and bring to a boil. Remove from the heat and let cool.
• Marinate the “beef” for 6 hours, turning several times to coat.

To Assemble:
12 skewers, soaked in water
20-oz. can chunk pineapple
1 bell pepper, cut into 1-inch pieces
2 onions, cut into 1-inch pieces

• Place the “beef” on the skewers, alternating with the pineapple, bell pepper, and onions. Grill for 5 to 10 minutes, turning halfway through, until the onions caramelize.

Makes 6 servings
