Grilled Seitan With Crisp Apple Salsa

For the Salsa:
2 cups diced Fiji apples
1 Anaheim chile pepper, seeded and chopped
1 cup diced yellow onion
1/4 cup lime juice
1 Tbsp. peeled and finely slivered fresh ginger
Salt and pepper, to taste

For the Seitan:
1/4 cup dry white wine
1/4 cup apple cider
1/2 tsp. grated lime zest
1/2 tsp. salt
Dash of pepper
2 Tbsp. olive oil
1 lb. seitan

For the Salsa:
• Combine all the ingredients and allow the flavors to blend for approximately 30 minutes.

For the Seitan:
• Combine the wine, apple cider, lime zest, salt, pepper, and olive oil and pour over the seitan. Marinate for 20 to 30 minutes. Drain and grill over medium-hot coals, turning once, until done. Serve with the salsa.

Makes 4 servings
