This delicious vegan lentil loaf combines tender lentils, sautéed onions, and flavorful herbs for a hearty and satisfying dish perfect for any meal.

Ingredients

  • 1 1/2 cups lentils, rinsed

  • 3 1/2 cups water

  • 2 onions, diced

  • 1/4 cup vegetable oil

  • 2 cups cooked rice

  • 1 tsp. garlic powder

  • 1 tsp. salt

  • 1/4 cup ketchup or barbecue sauce, plus more for spreading on the loaf

  • 1 tsp. sage

  • 1/2 tsp. marjoram

Directions

  • Place the lentils and the water in a large pan and cook over medium heat until tender.
  • Meanwhile, in a frying pan, cook the onions in the oil over medium-high heat.
  • Partially mash the lentils and stir in the onions, rice, garlic powder, salt, ketchup, sage, and marjoram.
  • Press into an oiled loaf pan and spread some ketchup on top.
  • Bake at 350°F for 1 hour.
