Top o’ the Mornin’ Taters

1 medium onion, finely chopped
1 clove garlic, crushed
2 Tbsp. oil
2 large potatoes, grated
Salt and pepper, to taste

• Sauté the onion and the garlic in the oil until the onions are soft. Add the potatoes to the onion and garlic and cook until tender. Add salt and pepper, to taste.

Makes 2 to 3 servings.
