“Shrimp” Scampi

1 12-oz. package linguine
3/4 cup margarine
1 lb. vegetarian shrimp/prawn
4 cloves garlic, minced
2 Tbsp. lemon juice
3 Tbsp. chopped fresh parsley
Salt and pepper, to taste

• Preheat the oven to 400 degrees F.
• Bring a large pot of lightly salted water to a boil. Add the pasta. Cook for 8 to 10 minutes. Drain.
• Put the margarine in a large glass baking dish and heat in the oven until the margarine melts. Add the vegetarian shrimp, garlic and lemon juice and stir. Return the dish to the oven and bake for 3 minutes. Stir in the parsley and continue baking for 2 more minutes, or until the “shrimp” are heated through. Season with salt and pepper.
• Transfer the pasta to a large bowl. Add the “shrimp” mixture and toss to combine. Serve immediately.

Makes 4 servings.

    You are right that it may not be much healthier. But it will almost certainly be lower in saturated fat and sodium, and will be cholesterol-free. And of course, the most important part is that it’s not meat. these should not be staple foods by any stretch, I see them as more of a craving food for ex-carnivores. I plan to give it a try once I can locate some faux shrimp… which I have never heard of before.

    I’m a vegetarian and sometimes use this faux items, but as an argument for better health I don’t think it holds weight. Ok, these are great points about shrimp not being healthy, but many faux products aren’t either. They are loaded with preservatives and artifical ingredients
