Shepherd’s Pie

Shepherd's Pie

4 medium potatoes, diced
2 Tbsp. margarine
1/4 cup soy milk or liquid nondairy creamer
Salt and pepper, to taste
1 medium onion, finely chopped
1 Tbsp. vegetable oil
12 oz. faux ground beef-style crumbles (try Yves® Veggie Ground Round)
1 10.5-oz. can Campbells mushroom gravy (or 1 1/4 cups prepared vegetarian gravy of your choice)
1 6-oz. can mixed peas and carrots, drained
Salt, garlic powder, pepper, and cayenne, to taste

• Boil the potatoes for 20 minutes, or until tender. Drain and mash with the margarine and soy milk or nondairy creamer. Season with salt and pepper.
• In a medium pan, sauté the onion in the oil until translucent.
• In a medium bowl, mix the cooked onions, faux beef crumbles, mushroom gravy, peas and carrots, and spices. Pour into a pie pan. Top the crumble mixture with the potatoes, spreading to the edges.
• Bake in a 350°F oven for 30 to 40 minutes, until the potatoes are browned and the crumble mixture bubbles out the edges.

Makes 6 to 9 servings

        Use seitan instead of crumbles for a chunker mix. Fresh carrots and peas from Trader Joe’s and rosemary and thyme make this tastier? I forgot to add the gravy once and didn’t miss it.

        Instead of faux meat, try lentils in this recipe, so delicious and full of nutrients!

        For mock ground beef, I only like Morningstar Farms Griller’s Recipe Crumbles. It is great in tacos also.

        Last year I just adapted a traditional Irish recipe to be meatless, so if you don’t like gravy or don’t want to use it, try simmering your veggies in 1/2c red wine (doesn’t have to be fancy, I used Sangria) and it gives it bit of pizazz!

        I made mine today. It’s good but not great. I forgot to add cayenne pepper too. I think that the recipe needs more flavor and wonder what I could do to achieve that. Next time I’ll buy pickles to eat it with. Otherwise, it’s a quick and simple dish, which I always appreciate in recipes.

        I used tvp mince which works great in a good sauce! i also use loooads of herbs ^^ my boyfriend loves it too!

        I think there is a big movement of people turning vegan after the footage of how they torture animals at abbatoirs, animal testing, poultry farms, etc. Who else thinks that too?

        My husband who is a huge meat and potatoes fan LOVED this meal. He is not open to vege meat options yet he didn’t even notice it in the shepherds pie.

        I don’t like the Yves Veggie Cuisine Ground Round. I use chopped mixed mushrooms [oyster, cafe, cremini, portobello and shiitake, all available major food supermarkets] and lightly sauté in canola oil with freshly minced garlic and a wee bit of mild onion (don’t like much onion in anything). I put garlic in last and do not let it brown.

        This recipe looks so good! But if you live at school like myself with limited cooking appliances Amy’s Shepherds Pie is a really good alternative. I like to put a little bit of vegan margarine on it too :)

        This is veggie comfort food! I didn’t put in the entire can of gravy – it just seemed like it would be too runny, so I used about half the can. (Since it came out so good I stashed the remainder of the gravy in the freezer for a future batch!) Because my family isn’t all that fond of the peas & carrot mix, we used just the crumbles cooked with onion and gravy as a layer over some canned corn and topped it with the mashed potatoes. Very yummy stuff!

        Hey Jamie, this recipe calls for Campbell’s Mushroom Gravy not Cream of Mushroom. Hope that helps!

        Campbell’s does contain cream (milk) whey. Still in search of a totally vegan cream of mushroom soup. Anyone know of any?

        Just made this recipe …very yummy! There is beef in the powder McCormick mushroom gravy! So I stuck w/ campbells that didn’t list any animal product.

        Careful with the Campbell’s Mushroom Soup/Gravy. Some contain Beef Broth. Got to read those labels.
        This was a hearty filling dish for a cold rainy night. Thanks.

        Delicious! The only thing I changed was I used a frozen mixed veggies as opposed to juts peas and carrots. It is amazingly tasty and very satisfying. My boyfriend even enjoyed it!

        Here’s the recipe I always use for Shepard’s Pie! The only thing I substitute is McCormick Mushroom package gravy mix instead of Campbells Mushroom Gravy. Also turn oven to broil for last 5-7 min. Enjoy!
