4 Tbsp. extra virgin olive oil
2 cloves garlic, crushed
1 Tbsp. dried shallots
1 cup onions, chopped into long strips
2 cups bell peppers (green, red, and yellow), chopped into long strips
1 cup French beans, boiled and chopped into long strips
1 Tbsp. oregano, fresh or dried
Salt, to taste
1 Tbsp. lemon juice
1 cup tomatoes, chopped into long strips
1/3 cup nondairy Parmesan cheese, freshly grated
12 oz. fussili pasta, cooked al dente and drained well
1/2 cup nondairy Parmesan cheese, freshly grated
• Heat the oil. Add the garlic and shallots and stir. Add the onions and bell peppers and stir for 3 to 4 minutes. Add the French beans and stir for 2 minutes. Add the oregano, salt, and lemon juice and stir well. Add the tomatoes, stir well, and remove from heat. Finally, stir in the nondairy Parmesan cheese and the cooked pasta.
• Top with nondairy Parmesan cheese and serve hot.
