Mama’s Mock Meatloaf

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

        Another sub for eggs is applesauce! I use a scoop and a half per egg.

        I have been a happy and healthy vegan for many years, but now I’d like to lose a little weight. It would help a lot if PETA recipes had some calorie counts. Does anyone know of a good, calorie-counted vegan recipe book?

        My husband LOVED this meatloaf! I used 2 packages of Trader Joes crumbles and it really held together well.

        I am surprised anyone does not like the nutmeg. I had used that topping on my meatloaf for 40 years and could never seem to be satisfied with boring ketchup only.

        The best substitute for eggs is ground flax seed. 1T flax to 3T hot water, whisk until egg consistency. This is equal to one egg and works on all baked goods/pancakes etc.

        Same comment as Jurek. Can you buy the beef substitute product in Australia? Would nut-meat be okay to use?

        I tried this but with a couple of changes. I used BBQ sauce mixed in with the fake meat and ketchup only for the topping. I left out the nutmeg. I used bulgur instead of oatmeal. I added a generous dollop of vegan worchester. It is delicious!
        Being vegan isn’t about deprivation or being a martyr – it is about eating without cruelty. Enjoying the taste and convenience of some of the fake meat products does not mean you are not being true to being vegan. There is no reason to give up some of the comfort foods we all enjoyed as meat eaters.

        made this,used the meat substitute recomended (not so good)- and the topping could have been better with out the nutmeg, if attempted again will use different meat product and add some more peppers

        you can find meat alts. at almost all big supermarkets and food chains such as trader joes, whole foods. in ohio we have a food chain heinens that carries fresh and frozen, if you buy one brand and don’t like, don’t give up try a diff. one. also gardein has wonderful meat subs. they also have a website that tells you were to get it.

        You can go to any health food store and get vegan products. I don’t know where you live but in the UK, places like Asda (which is Wal-mart in USA) and Tesco (Fast-and-fresh in USA) both sell vegan mince. You can get mince/chunks dried at health food stores and re-hydrate it with water or stock.

        My daughter is a vegetarian to stop cruelty to animals. I am trying to convert myself for health reasons mainly and I also hate to see animals abbused. It will be a challange to get my husband and son to stop eating meat but my husband really needs to for his health. Any suggestions? where do I get all of these Vegan food especially the meat alternative?

        I recently became vegan after doing the 30 day challenge and have never felt better. I try not to eat or buy processed food but I do buy the meat alternatives once in a while and I see nothing wrong with that. I have a 2 vegetarian daughters 1 vegan daughter and 1 hubby who stills eats meat but we are working on him and he loves the recipes. Thank you peta.

        @marj – there may be no point for you, but for those who struggle with the desire to eat meat, vegan meat substitutes can make the difference between eating actual animals and not. Some people are vegan for health reasons, others choose to be vegan to avoid cruelty to animals. Not everyone is at the same place in the path that you are.l

        @ IslandBeth – are family just went vegan with the help of a fabulous book called “The Complete Guide To Vegan Food Substitution” an amazing book that shows you how to make great vegan “meats” at home, supereasy to do and them any recipy can be vegan and non-proccessed. Thank you

        You might try The Seventh Day Diet book by Rucker & Hoffman. I’m not SDA but recently went vegan. It is filled with recipes that use very little processed ingredients and also discusses meal planning. The biggest downside is that SDA apparently don’t use many spices, so the recipes can be a bit bland for my taste, but that’s easy to fix. Good luck!

        I wish that more vegan sites offered non-processed menu planning. We do not eat anything processed, so that mock meat stuff with all of the chemicals is out. No fake cheese, no pretend butter, etc. It consequently gets really hard to find a lot of menu planning. We are currently vegetarians, but want to go full on vegan, but having trouble doing so.

        Muffins freeze really well and make wonderful snacks for later since they also thaw pretty quickly if set out on the counter upon rising in the morning. In a whole batch of muffins, the sugar to one muffin ratio is not that great….plus you’re only eating one at a sitting anyway.

        my boyfriend is a cook, and also a meat eater :( but hes been having to cater to my vegetarian diet for almost two years now. he has been making fantastic meals! if you want me to send some of his recipes i will be happy to! i think this needs a bit more recipes! thanks for what is on here though :)

        This sounds wonderful! I have been looking for a vegan receipe for meatloaf, and this sounds like a winner,(give or take a few items) I just hope I can find the Gimme Lean Beef in my market

        this two week meal plan envolves a cup of sugar…for breakfast…bread at lunch and then two slices of white bread, 1/4 cup of ketchup and 1/4 cup of sugar again, and then more ketchup at dinner. I live alone, am I expected to be able to consume all this, or afford it? Or want to?
