Creamy Spinach Dip

1 container nondairy sour cream (e.g., Tofutti)
1 Tbsp. lemon juice
1/2 cup salsa
1 pkg. frozen spinach, thawed and drained
1 pkg. vegetable soup mix

• Combine all ingredients and refrigerate for 1 hour before serving.
• Serve with raw vegetable pieces or chunks of crusty bread.

Makes 10 to 12 servings
