1/3 cup Nayonaise or Vegenaise
3 Tbsp. white vinegar
2 Tbsp. plus 2 tsp. granulated sugar
2 Tbsp. plain soy milk
1 cabbage, chopped
1/2 cup carrot, shredded
• Combine all the ingredients, except the cabbage and carrots, in a large bowl and blend with an electric mixer until smooth.
• Add the cabbage and carrots and toss well.
• Cover and chill overnight in the refrigerator. The flavors fully develop after 24 to 48 hours.
Makes approximately 1 1/2 cups
