Chocolate Fudge

6 Tbsp. vegan margarine
3 1/2 cups confectioner’s sugar
1/2 cup cocoa powder
1 tsp. vanilla extract
1/4 cup soy milk
1 cup chopped nuts (optional)

• Lightly grease a 5×9-inch loaf pan using a little of the margarine.
• Put the remaining margarine, sugar, cocoa, vanilla, and soy milk in a heatproof mixing bowl. Place the bowl over simmering water and stir until smooth. Add nuts if desired.
• Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.

Makes 2 to 3 dozen squares

    The recipe as printed is incorrect (as of 12/4/11). It should read 3 1/2 cups of confectioner’s sugar, not 1 1/2. With the correct amount it will set just fine and it tastes great.

    I made this the other night and it doesn’t set up like fudge should. It is more like a hot fudge topping for ice cream. It tastes good, it is just not the right consistency for cutting into squares.
