Black Bean and Corn Salad

2 cups black beans, drained
2 cups corn, drained
6 Tbsp. fresh lime juice (or juice of 1 lime)
5 Tbsp. olive oil
1/4 cup red onion, minced
1/4 cup scallions, minced
1/8 cup cilantro, minced
1 1/2 tsp. cumin
1/2 cup chopped tomatoes
Salt and pepper, to taste

• Mix all ingredients, except the tomatoes, together.
• Add salt and pepper. Cover and chill.
• Shortly before serving, toss in the tomatoes.

Makes 4 servings

    A number of recipes use fresh cilantro as an ingredient. I (and many others) can’t stand the taste of cilantro leaves. Is there a substitute that you can recommend?
