Awfully Good Waffles

1/2 cup white flour
1/2 cup whole wheat flour
2 Tbsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt (optional)
1 cup soy milk or non-dairy milk
1/2 cup applesauce

  • Combine the dry ingredients and mix. Add the soy milk and applesauce, pour into an oiled waffle iron, and cook until golden brown.
  • You can turn these into pancakes by adding more liquid.
