Avocado Cream Pasta

2 avocados, pitted and diced
1 clove garlic, minced
Juice of 1/2 lemon
1/4 cup unsweetened soy milk
1/4 cup water
Salt, to taste
Red pepper flakes, to taste
Cooked pasta

•Combine the avocados, garlic, and lemon juice in a food processor. As the mixture is blending, add the soy milk and then the water. Add more or less water depending on your desired consistency.
•Add salt and red pepper, to taste.
•Toss with your favorite cooked pasta and serve.

Makes about 2 cups

        Wish someone would make Vegan Microwave meals. After my Heart Attack haven’t felt like doing alot of preparation. I know if I stick with it will feel alot healthier. We live in an area that could care less about Health.

        This sauce is absolutely ADDICTING! I added some black pepper and minced red onion to supplement the red pepper flakes I didn’t have on hand. It is delicious!! Plopped the sauce right on top of some fresh pasta and garnished with a dash of cayenne, a little sprinkle of red onion, and a sprig of cilantro. AMAZING!
