Watermelon Granita

4 cups seedless watermelon chunks
1/2 cup sugar
Juice of 1 lemon

• In a food processor, purée all the ingredients until smooth. Pour into a shallow, wide pan and freeze for 1 hour.
• Rake with a fork, then freeze for an additional hour. Repeat.
• Remove from the freezer, rake, and serve in cups.

Makes 2 cups
