Tahini Dressing

1 Tbsp. garlic, very finely minced
1/2 tsp. salt
Pinch of cayenne
1 cup lemon juice
3/4 cup water
1 cup tahini
1/2 cup olive oil


• In a blender, combine all the ingredients, except the olive oil, on high speed until smooth. While the machine is running, slowly pour in the olive oil.

Note: The dressing will thicken a bit as it sits, so you may need to stir in a bit of water.

Makes 2 1/2 cups
