Fudge Mint Petit Fours

1 cup granulated sugar
1 cup plus 6 Tbsp. margarine
1 cup flour
1/2 tsp. salt
16 oz. chocolate syrup
1 tsp. vanilla
1 cup confectioner's sugar
2 Tbsp. green Crème de Menthe
1 cup chocolate chips


• Preheat the oven to 350°F.
• In a large bowl, using an electric mixer, cream together the granulated sugar and 1/2 cup margarine. Mix in the flour and salt, then add the chocolate syrup and vanilla and mix until thoroughly combined. Spread the batter into a greased 9x13-inch pan and bake for 30 minutes. Cool completely.
• Meanwhile, mix together the confectioner’s sugar, 1/2 cup margarine (melted and cooled), and the Crème de Menthe. Spread over the cooled cake.
• Melt together the remaining 6 Tbsp. margarine and the chocolate chips and cool slightly. Spread over the Crème de Menthe mixture. Refrigerate until set, then cut into 1-inch squares. Chill thoroughly again before serving.
