Apple Roll

4 large apples, peeled and chopped
1 1/2 cups plus 2 Tbsp. sugar
1 tsp. cinnamon
2 cups flour
4 tsp. vegetable shortening
1/2 tsp. salt
3 tsp. baking powder
1/4 cup nondairy creamer (try Silk brand)


• In a large pan over medium heat, combine the apples, the 1 1/2 cups of sugar, and the cinnamon. Cook until the apples are soft but not mushy. Remove from the heat.
• Combine the 2 Tbsp. of sugar, the flour, shortening, salt, baking powder, and nondairy creamer until a dough forms.
• On a lightly floured surface, roll the dough into a rectangle. Spread the cooked apples on top and roll up like a jelly roll. Slice into 1-inch-thick rounds.
• Transfer to a greased cookie sheet. Bake at 350°F for 20 minutes, until browned.
