Hi Amy, This soup looks delicious. I'll have to try your trick for "cream." In the past I've found simply blending most of the soup (with an immersion blender) is sufficient enough for a creamy consistency. And I've tried using oats (and the immersion blender), which works, but the base recipe wasn't so great, so I'll have to try it elsewhere. Anyway, this looks really good. Thanks for sharing.
