Bring the Diner Home on Sunday Morning!

The following article was written by Priyanka Naik of

If you’re from the Big Apple, you know how seriously we take our diners. They’re open 24/7, and they can satisfy any food craving you may have—even at 2 a.m.! Sometimes it’s nice to have breakfast at a diner—it’s cheap and reliable and the portions are hefty. However, it’s not always the healthiest or most vegan-friendly place to eat. So why not bring the diner home?

These Spicy Diner-Style Home Fries are crispy, spicy, vegan, and—best of all—healthy! So why not avoid the fat and calories in diner fries and whip up your own?

Spicy NYC Diner-Style Home Fries
4 large Idaho potatoes, scrubbed
Cooking spray
1/2 Tbsp. extra virgin olive oil
1 medium white onion, cut into medium-size cubes
1 Tbsp. garlic powder
1/2 Tbsp. onion powder
Cayenne pepper, to taste
Salt, to taste
Few grinds of coarse black pepper
2-3 Tbsp. finely chopped cilantro, optional

  • Wrap each potato in microwavable plastic wrap and microwave for about 4 minutes, or until tender. Set aside to cool. Dice into medium-size cubes.
  • Lightly coat a large skillet with cooking spray. Add the oil and set over a medium flame. Add the onions and sauté for 2 minutes. Add the spices and sauté until fragrant and the onions are soft, about 5 to 7 minutes.
  • Add the potatoes. Sauté for about 3 minutes, cover, and cook for 5 minutes. This is when the potatoes will get crispy on one side, so adjust the flame to prevent burning.
  • Uncover and adjust the salt and spices. Place in a serving dish and garnish with the cilantro if desired.
