Berry Breakfast Parfaits

Breakfast parfaits almost don’t even count as recipes because they’re so incredibly easy to make. Take soy yogurt, granola, and fruit, then layer away—that’s it. Yes, it’s super-easy, but that doesn’t mean the end result is boring.

The crunchy granola and cool creamy yogurt offer a wonderful contrast. The variety of fruits—you can use almost any type of fruit you like—results in sweet bursts of flavor and healthy vitamins.

I know—”parfait” and “healthy” are two words that you don’t always find together. Dessert parfaits are typically made by layering ice cream, not yogurt, with other not-so-healthy ingredients. But when you replace the ice cream with soy yogurt and opt for fruits and a little granola, you’re left with a delicious and healthy breakfast treat.

Berry Breakfast Parfaits

2 cups granola
2 cups vegan yogurt (vanilla or fruit-flavored)
2 bananas, sliced
1/2 cup sliced strawberries
1/2 cup raspberries or blueberries

  • In each of four tall glasses, layer some of the granola, yogurt, and fruit. Repeat until the glasses are filled or all the ingredients are used.

Makes 4 servings

    Well of course I read this yesterday at work and had to stop on the way home to get the makings… As it turned out my wife was making some kind of wok-cooked Chinese soup for dinner and this “parfait” was a great dessert contrast vs. the bitter bok choy.

    But I digress. Depending on the granola you use, this recipe can be made extra tasty with a few drops of agave nectar. I personally like to use toasted rolled oats for this type of recipe (i.e. not a pre-sweetened granola), and the agave really adds a lot to this variant. Also sprinkle a little bran in.
