I know I'm not in her target demographic, but she's starting to grow on me, this Jessica Simpson—not only because she put up a good fight for Mondo during the infuriating season finale of Project Runway but also because she's shown a willingness to give a vegan diet a try. Now, reports suggest that her diet might stick, thanks to the influence of her new fiancé, former NFL player Eric Johnson, who is apparently a vegan.
Not only has Jessica been experiencing the joys of tofu, she's also apparently learning to cook vegan dishes to share with Eric, who may be planning to open a chain of vegan fast-food restaurants.
If true, that's not only cool but also instructive: Our day-to-day activities and interactions offer as many chances to get the word out about ways to help animals as organizing a huge public protest!

Heard about the "Vegan Before 6" movement? Well, how about the "weekend vegan?" That's what CNN dubbed Jessica Simpson after she tweeted about test-driving a vegan diet:

As a blonde myself, I always felt a twinge of sympathy for Jessica Simpson as the dumb-blonde jokes flew. But even her snarkiest critics have to give credit where credit is due: Jessica just tweeted about her first taste of tofu and called it "yummy."
With so many fab cookbooks (and condiments) out there to help spice up your foray into vegan cooking, there's no reason not to give tofu a try.

Well, Jessica's thinking about opening her heart and home to a new pooch and word on the street is that she "wants a rescue dog."
We're thrilled to hear that she's thinking about rescuing a dog instead of buying one from a breeder. Today, we wrote to the star to urge her adopt her new friend from an animal shelter, pointing out that millions of dogs are euthanized at shelters every year simply because there aren’t enough homes for all of them. Even if she has her heart set on a particular breed, there are many purebreds at open-admission animal shelters and certainly many who are in the care of breed-specific rescue groups.
We hope, hope, hope that Jessica Simpson will join the long list of caring celebrities, including Charlize Theron, Katherine Heigl, Kyra Sedgwick, Audrina Patridge, and Alicia Silverstone, who have saved a life (or two or three) by adopting homeless animals.

Tons! No, we didn't mean it like that. Jessica knows what it's like to live in a fishbowl, and although she may not be the brightest bulb in the room, we're hoping that she might empathize with whales and dolphins who are forced to be on display their entire lives and cancel her upcoming performance at SeaWorld.
Considering her stint on the MTV reality show Newlyweds: Nick and Jessica—and the relentless scrutiny that she's under 24/7—we think that Jessica might be able to relate to the whales, dolphins, and other miserable animals at SeaWorld whose every move is gawked at and snickered over as if they were on some bad reality TV show. At least, we hope she can.

For a gal who's best known for her less-than-stellar brains (Chicken of the Sea, anyone?) and her ability to proportionately fill out daisy dukes, I'm gonna go on record saying that if anyone had to wear a ridiculous shirt like this, I'm glad it was Jessica—as people are more likely to follow the opposite of her lead ... ya know, since she's so well respected and all (yes, that was difficult to type without tossing in a hefty LOL). Maybe the meat-eaters of the world will be embarrassed to be categorized in the same field as Jessica Simpson. Ecorazzi has more on the story.
